Ingredients
Scale
- 2 large artichokes
- 4 tablespoons olive oil
- 4 cloves garlic, finely chopped
- 1/2 cup grated parmesan cheese
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- fresh parsley, chopped, for garnish (as needed)
- lemon wedges for serving (as needed)
Instructions
- Preheat your oven to 200°C (400°F). This is important for even roasting.
- Prepare the artichokes: Cut off the stems and remove the top part of each artichoke so that the petals are visible. Pull off the small lower leaves.
- Cut the artichokes in half lengthwise and scoop out the fuzzy choke inside with a spoon. Be careful not to damage the outer leaves.
- In a small bowl, mix together the olive oil, chopped garlic, grated parmesan, lemon zest, oregano, salt, and black pepper until a smooth paste forms.
- Generously brush the cut sides of the artichokes with the garlic-parmesan mixture, ensuring the paste gets well into the insides of the artichokes for maximum flavor.
- Place the artichokes cut side down on a baking sheet lined with parchment paper. Cover the baking sheet with aluminum foil to retain moisture.
- Roast the artichokes in the preheated oven for 25 minutes. The artichokes should be soft and fragrant.
- Then remove the foil and roast the artichokes for another 15-20 minutes until they are tender and the tops are golden brown. Be careful not to let them get too dark.
- After taking the artichokes out of the oven, let them cool slightly. This enhances the flavor and texture.
- Garnish the artichokes with freshly chopped parsley and serve hot with lemon wedges on the side for an extra flavor kick.
